1 (12- to 14-pound) fresh or frozen turkey, thawed

1 tablespoon olive oil

Kosher salt

Freshly ground black pepper

1/2 cup (1 stick) butter, melted

Herb-infused turkey stuffing, optional


1. Preheat oven to 325°F. Remove the neck and giblets from the turkey cavity and reserve for another use. Rinse the turkey inside and out with cold water and pat dry with paper towels.

2. Place the turkey in a roasting pan and rub the skin with the olive oil. Sprinkle generously with salt and pepper.

3. Place the turkey in the oven and roast for 3 to 3 1/2 hours, or until a thermometer inserted into the thickest part of the thigh registers 165°F. Baste the turkey with the melted butter every 30 minutes.

4. If desired, stuff the turkey with the herb-infused turkey stuffing.

5. Once the turkey is cooked through, remove it from the oven and let it rest for 15 to 20 minutes before carving.


– If the turkey starts to get too brown, tent it with aluminum foil.

– Always use a thermometer to check for doneness.

– Make sure to discard any stuffing that was not cooked inside the bird.

– Allow the turkey to sit for 20 minutes before carving to ensure maximum juiciness.
