Ingredients
2 to 3 lb roast (beef, pork, or lamb)
2 to 3 tablespoons of vegetable oil
Kosher salt
Freshly ground black pepper
1 large onion, chopped
3 cloves garlic, chopped
2 to 3 tablespoons of your favorite herbs
1 cup of beef, chicken, or vegetable stock
Instructions
1. Preheat oven to 350°F.
2. Rub the roast with oil and season generously with salt and pepper.
3. Heat a large Dutch oven over medium-high heat. When hot, add the roast and brown on all sides, about 8 minutes.
4. Remove the roast and set aside. Reduce the heat to medium and add the onion and garlic. Cook until softened, about 5 minutes.
5. Add the herbs and stir.
6. Return the roast to the pot and pour in the stock.
7. Bring the liquid to a simmer and cover the pot.
8. Transfer the pot to the preheated oven and cook until the roast is tender, about 1 1/2 to 2 hours.
9. Remove the pot from the oven and let the roast rest for 10 minutes before slicing and serving.
