Ingredients

• 2-3 lb beef roast (chuck roast or bottom round are good options)
• 2 tablespoons olive oil
• 1 tablespoon butter
• 2-3 cloves garlic, minced
• 2 carrots, peeled and cut into large chunks
• 2 celery stalks, cut into large chunks
• 1 large onion, peeled and cut into large chunks
• 2 cups beef broth
• 2 tablespoons Worcestershire sauce
• 2 tablespoons tomato paste
• 2 bay leaves
• 2 teaspoons dried thyme
• Salt and pepper to taste

Instructions

1. Preheat oven to 300°F.

2. Heat the olive oil and butter in a large oven-safe pot over medium-high heat.

3. Sear the roast on all sides until golden brown.

4. Add the garlic, carrots, celery, and onion to the pot and sauté until the vegetables are softened, about 4-5 minutes.

5. Pour in the beef broth, Worcestershire sauce, tomato paste, bay leaves, and thyme. Bring to a boil.

6. Cover the pot and transfer to the preheated oven.

7. Roast for 2-3 hours, or until the meat is tender and easily falls apart.

8. Remove from oven and let rest for 10 minutes before serving.

9. Discard bay leaves before serving.

Tips

• To save time, you can use store-bought beef broth instead of making your own.
• Make sure the vegetables are cut into large enough pieces so they don’t get overcooked.
• If the liquid reduces too much during cooking, add more beef broth.
• You can also add potatoes or other vegetables to the pot roast.
• To make a richer gravy, mix 1 tablespoon of cornstarch with 2 tablespoons of cold water and stir into the liquid before serving.
