Ingredients

  • 1 (3-4 pound) eye round roast
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon dried rosemary
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • 1 teaspoon smoked paprika
  • Salt and black pepper, to taste

Instructions

  1. Preheat oven to 350 degrees F.
  2. Rub roast with olive oil. In a small bowl, combine garlic, rosemary, thyme, oregano, paprika, salt and pepper. Rub the seasoning mixture over roast to evenly coat.
  3. Place roast in a shallow roasting pan, fat side up. Cook for 1 hour and 20 minutes, or until internal temperature reaches 145 degrees F.
  4. Remove from oven and let rest for 10 minutes before slicing.

Serving

Slice the roast and serve with your favorite sides. Enjoy!
