1. Preheat the oven to 325 degrees Fahrenheit.

2. Place the roast on a roasting rack in a roasting pan, fat side up.

3. Rub the roast lightly with olive oil, and season with salt and pepper.

4. Insert a meat thermometer into the center of the roast.

5. Place the roast in the preheated oven and roast for approximately 1 hour and 15 minutes.

6. Remove the roast from the oven and check the temperature with the meat thermometer. The roast should be at 165 degrees Fahrenheit for medium-rare, 175 degrees Fahrenheit for medium, and 185 degrees Fahrenheit for well-done.

7. If the roast is not cooked to your preferred degree of doneness, place back in the oven and continue roasting, checking the temperature every 15 minutes.

8. When the roast is done, remove it from the oven and let it rest on a cutting board for 15 minutes before carving.


• For added flavor, add fresh herbs and garlic cloves to the roasting pan before roasting.

• If the roast starts to brown too quickly, tent the pan loosely with aluminum foil.

• To ensure even cooking, make sure to check the temperature of the roast in several places to make sure that it is cooked evenly.
