Ingredients

– 2-3 lb deer roast
– 1/2 cup olive oil
– 2 cloves garlic, minced
– 1 teaspoon dried thyme
– 1 teaspoon dried rosemary
– 1 teaspoon dried oregano
– Salt and pepper to taste

Instructions

1. Preheat oven to 350°F.

2. Rub the deer roast with the olive oil, garlic, thyme, rosemary, oregano, salt, and pepper until evenly coated.

3. Place the deer roast in a roasting pan and place in the preheated oven.

4. Roast for 1-1/2 to 2 hours, or until the internal temperature of the roast reaches 145°F.

5. Remove from the oven and let rest for 10 minutes before slicing.
