Ingredients

1 (2-pound) filet mignon roast
2 tablespoons olive oil
2 tablespoons unsalted butter
Salt and freshly ground black pepper
1/4 cup dry red wine
1/4 cup beef broth
1 teaspoon dried thyme
2 cloves garlic, minced
2 tablespoons chopped fresh parsley

Instructions

1. Preheat the oven to 450 degrees F (230 degrees C).

2. Place the filet mignon roast in a shallow roasting pan. Rub the roast with the olive oil and butter, and season generously with salt and pepper.

3. Roast the filet mignon in the preheated oven for 15 minutes. Reduce the oven temperature to 350 degrees F (175 degrees C), and roast for an additional 25 to 30 minutes, or until the desired degree of doneness is reached.

4. Remove the roast from the oven, and transfer to a warm plate. Cover with aluminum foil, and allow to rest for 10 minutes.

5. To make the pan sauce, add the red wine and beef broth to the roasting pan. Place the pan over medium-high heat on the stovetop, and bring to a simmer. Cook until the sauce is reduced by half, about 8 minutes. Stir in the thyme, garlic, and parsley. Cook for an additional 2 minutes.

6. Slice the roast and serve with the pan sauce. Enjoy!
