3. Next, bring the 2 cups of water to a boil in a medium-sized pot.

5. Place a lid on the pot, turn the heat down to low, and let the rice simmer for 18 minutes.

6. After 18 minutes, turn the heat off and let the rice rest for 10 minutes.
