1 butter squash
2 tablespoons olive oil


1. Preheat the oven to 375°F.
2. Cut the butter squash in half and scoop out the seeds.
3. Place the squash cut-side down on a baking sheet lined with parchment paper.
4. Roast in the preheated oven for 30 minutes or until the squash is easily pierced with a fork.
5. Let the squash cool slightly and then use a spoon to scoop out the flesh of the squash.
6. Transfer the squash flesh to a food processor and blend until it forms a puree.
7. Heat a large pot over medium heat and add the olive oil.
8. When the oil is hot, add the squash puree and stir to combine.
9. Cook for 10 minutes, stirring occasionally.
10. Add salt and pepper to taste.
11. Bring a large pot of water to a boil and add the butter squash noodles.
12. Cook for 3-5 minutes or until the noodles are al dente.
13. Drain the noodles and add them to the pot with the squash puree.
14. Stir to combine and serve.


– You can sub out the butter squash noodles for any other type of noodle for this dish.
– Add a pinch of red pepper flakes for a bit of heat.
– For a creamy dish, stir in a tablespoon of cream or coconut milk before serving.
