Step 1: Prepare the Brisket

The first step in cooking a brisket in a smoker is to prepare the brisket. Start by trimming off any excess fat from the brisket. Pat the brisket dry with paper towels and season it with your favorite rub. Place the brisket in a shallow dish or pan, cover with plastic wrap, and refrigerate overnight.

Step 2: Preheat the Smoker

Once the brisket is ready, preheat the smoker to 225-250°F. Make sure to use a good quality wood such as hickory or mesquite for the smoke flavor.

Step 3: Smoke the Brisket

Place the brisket in the smoker, fat side up, and cook for about 6-8 hours, or until the internal temperature of the brisket reaches 195°F. Be sure to add more wood chips or chunks every hour or so to maintain the smoke flavor.

Step 4: Wrap the Brisket

Once the brisket has reached the desired internal temperature, remove it from the smoker and wrap it tightly in foil. Place the wrapped brisket back in the smoker and cook for an additional 1-2 hours, or until the internal temperature of the brisket reaches 205°F.

Step 5: Rest the Brisket

Remove the brisket from the smoker and let it rest for at least 30 minutes before slicing. Slice the brisket against the grain and serve. Enjoy!
