How To Cook Black-Eyed Peas

– 2 cups of dried black-eyed peas, rinsed and sorted
– 2 tablespoons of olive oil
– 2 cloves of garlic, minced
– 1 teaspoon of dried oregano
– 1 teaspoon of ground cumin
– 1 teaspoon of smoked paprika
– 4 cups of vegetable broth
– Salt and pepper to taste


1. Heat the olive oil in a large pot over medium heat.
2. Add the garlic and sauté until fragrant, about 30 seconds.
3. Add the oregano, cumin, and paprika and stir to combine.
4. Add the black-eyed peas and stir to coat in the spices.
5. Pour in the vegetable broth and bring to a boil.
6. Reduce the heat to low and simmer for 45 minutes, stirring occasionally.
7. Taste and adjust seasoning with salt and pepper as necessary.
8. Serve and enjoy!
