3-4 medium-sized beets

Salt and pepper, to taste

1 tablespoon olive oil


1. Preheat oven to 400°F.

2. Wash the beets and trim off the stems and root ends.

3. Place the beets on a baking sheet and drizzle with olive oil.

4. Roast in the preheated oven for 30-40 minutes, or until the beets are tender.

5. Once the beets are cooked, remove them from the oven and let cool.

6. Peel the skins off the beets and discard.

7. Slice the beets into wedges or cubes and season with salt and pepper, to taste.

Serving Suggestions

Beets can be served warm or cold and are a great addition to salads, sandwiches, or as a side dish. They can also be pureed and used as a base for soups or dips.
