How To Cook Lamb Roast

All you need to know about: How To Cook Lamb Roast.

Ingredients needed:

• 2.5-3kg (5-6 lbs) boneless leg of lamb
• 2 tablespoons of olive oil
• 2 cloves garlic, finely chopped
• 1 teaspoon of each of dried rosemary and thyme
• 1 teaspoon of salt
• ½ teaspoon of ground black pepper
• 2 tablespoons of tomato paste
• 2 tablespoons of red wine vinegar
• 2 tablespoons of Worcestershire sauce
• 2 cups of beef broth
• 2 tablespoons of butter
• 2 tablespoons of all-purpose flour

Instructions:

1. Preheat the oven to 220°C (425°F).

2. Place the lamb in a roasting pan and rub the olive oil, garlic, rosemary, thyme, salt and pepper all over the lamb.

3. Mix together the tomato paste, red wine vinegar and Worcestershire sauce and spread it over the lamb.

4. Pour the beef broth into the roasting pan.

5. Place the lamb in the oven and roast for 15 minutes. Reduce the oven temperature to 160°C (320°F) and continue to roast for about 1.5-2 hours, or until the internal temperature of the lamb reaches 65°C (150°F).

6. Remove the lamb from the oven and let it rest for 10 minutes before carving.

7. While the lamb is resting, prepare the gravy. Melt the butter in a medium saucepan over medium heat. Add the flour and stir until the mixture is smooth. Gradually add the pan juices from the roasting pan and cook until the gravy is thickened.

8. Carve the lamb into thin slices and serve with the gravy. Enjoy!
