– 2 racks of lamb (about 1 pound each)
– 2 tablespoons of olive oil
– 1 tablespoon of salt
– 1 teaspoon of black pepper
– 1 tablespoon of fresh herbs (such as oregano, thyme, rosemary, or a combination)
– 2 cloves of garlic, minced


1. Preheat oven to 400°F.
2. Brush the racks of lamb with olive oil and season with salt and pepper.
3. Place the racks of lamb in a roasting pan, fat side up.
4. Rub the minced garlic and fresh herbs onto the fat side of the racks of lamb.
5. Place the roasting pan in the preheated oven and roast for 10 minutes.
6. After 10 minutes, reduce the oven temperature to 350°F and continue roasting for 15-20 minutes, or until the internal temperature of the lamb reaches between 135-140°F.
7. Remove the rack of lamb from oven and let rest for 10 minutes before serving.

Serving Suggestion

Serve the rack of lamb with roasted potatoes and a side of steamed vegetables for a complete meal. Enjoy!
