Ingredients:

1 leg of lamb, about 5 to 7 pounds
1 head of garlic, cloves separated, peeled and halved
2 tablespoons of olive oil
2 tablespoons of fresh thyme leaves
2 tablespoons of fresh rosemary, finely chopped
2 tablespoons of fresh oregano leaves
2 tablespoons of fresh sage leaves
2 teaspoons of freshly ground black pepper
1 teaspoon of kosher salt

Instructions:

1. Preheat oven to 350 degrees F.
2. In a small bowl, mix together the garlic, olive oil, thyme, rosemary, oregano, sage, pepper and salt to create a paste.
3. Place the leg of lamb in a roasting pan, fat side up.
4. Rub the paste all over the lamb, making sure to cover the entire surface.
5. Place the roasting pan in the preheated oven and bake for 1 1/2 to 2 hours, or until the internal temperature of the lamb reaches 145 degrees F.
6. Remove the lamb from the oven and let it rest for 10 minutes before serving.

Tips and Tricks:

For a more traditional flavor, you can also add a few bay leaves to the paste.
If you want to add additional flavor, try adding a few tablespoons of Dijon mustard to the paste.
If you don’t have fresh herbs on hand, you can use dried herbs instead. Just reduce the amount by half.
For an even crispier crust, you can also add a few tablespoons of bread crumbs to the paste.
