All you need to know about: How To Cook A Lamb.

1 whole leg of lamb
Extra-virgin olive oil
Garlic cloves
Fresh herbs of choice (rosemary, oregano, thyme, etc)

1. Preheat the oven to 350 degrees F (175 degrees C).

2. Place the lamb leg onto a roasting tray.

3. Rub the lamb leg with extra-virgin olive oil.

4. Sprinkle generously with salt and pepper.

5. Peel and slice the garlic cloves and rub them into the lamb leg.

6. Place fresh herbs of your choice onto the lamb leg.

7. Cover the tray with aluminum foil.

8. Place the roasting tray into the preheated oven and roast for about 1 hour and 15 minutes, or until the internal temperature of the lamb reaches 160 degrees F (71 degrees C).

9. Remove the tray from the oven and discard the foil.

10. Let the lamb rest for at least 10 minutes before serving.

If you’re using a smaller leg of lamb, reduce the cooking time accordingly.
You can also add other seasonings such as cumin, paprika, and chili powder to the lamb before roasting.
If you’re looking for a crispier outer layer, remove the foil for the last 15 minutes of cooking.
