Ingredients
-1 boneless breast of lamb, about 1-1/2 pounds
-2 tablespoons olive oil
-4 cloves garlic, minced
-1 teaspoon fresh rosemary, chopped
-1 teaspoon fresh thyme, chopped
-1/2 teaspoon salt
-1/4 teaspoon black pepper
Instructions
1. Preheat oven to 375°F.
2. Place the breast of lamb on a cutting board and pat it dry with paper towels.
3. Rub the olive oil on all sides of the lamb.
4. In a small bowl, mix together the garlic, rosemary, thyme, salt, and pepper. Rub the mixture onto all sides of the lamb.
