Preparing the Lamb Chops
Start by preparing the lamb chops. Trim any excess fat from the chops and season with salt and pepper to taste. Heat a skillet over medium-high heat and add a tablespoon of oil. Once the oil is hot, add the lamb chops and cook for 3-4 minutes per side, or until the internal temperature reaches 145°F. Remove the chops from the skillet and set aside while you prepare the rest of the dish.
Making the Sauce
In the same skillet, add 1 tablespoon of butter and melt. Once melted, add 1 tablespoon of garlic and sauté for 1 minute. Then add 1/4 cup of white wine to the skillet and simmer for 2-3 minutes. Finally, add 1/4 cup of chicken broth and 1/4 cup of heavy cream and stir to combine. Simmer for an additional 2-3 minutes, or until the sauce has thickened.
Finishing the Lamb Chops
