How to Cook a Boneless Leg of Lamb

Ingredients and Equipment

You will need:

– 1 boneless leg of lamb
– 1/4 cup of olive oil
– 2 cloves of garlic, minced
– 1 teaspoon of dried rosemary
– 1 teaspoon of dried thyme
– 1 teaspoon of dried oregano
– 2 tablespoons of freshly chopped parsley
– Salt and freshly ground black pepper
– Roasting pan
– Aluminum foil

Instructions

1. Preheat the oven to 375°F (190°C).

2. Place the leg of lamb in the roasting pan.

3. In a small bowl, mix together the olive oil, garlic, rosemary, thyme, oregano, parsley, and salt and pepper to taste.

4. Rub the mixture all over the leg of lamb.

5. Cover the roasting pan with aluminum foil.

6. Place the roasting pan in the preheated oven and bake for 1½ to 2 hours, or until the internal temperature of the lamb reaches 135-140°F (57-60°C).

7. Remove the foil and continue to cook for an additional 20 minutes, or until the lamb is brown and crispy on the outside.

8. Remove the pan from the oven and let the lamb rest for 10 minutes before slicing and serving.

Tips

– If you don’t have fresh herbs on hand, you can substitute dried herbs.

– If the lamb is not browning properly, you can turn on the broiler for the last few minutes of cooking.

– To ensure even cooking, make sure the lamb is the same thickness throughout.

– You can also add vegetables such as potatoes, onions, and carrots to the roasting pan for a delicious side dish.
