• 1 shank ham, 2-3 pounds
• 1/3 cup brown sugar
• 2 tablespoons garlic powder
• 2 tablespoons onion powder
• 2 tablespoons paprika
• 2 teaspoons black pepper
• 2 teaspoons dry mustard
• 1 teaspoon ground ginger
• 1 teaspoon ground cumin
• 2 tablespoons vegetable oil


1. Preheat oven to 350°F.
2. Remove the skin from the shank ham, if desired.
3. In a small bowl, mix together the brown sugar, garlic powder, onion powder, paprika, black pepper, dry mustard, ginger, and cumin.
