Ingredients

– 4-5 lb. corned beef brisket
– 1 onion, quartered
– 3 cloves garlic, smashed
– 2 bay leaves
– 1 teaspoon black peppercorns
– 8 cups water
– 1/4 cup apple cider vinegar

Instructions

1. Place the corned beef in the slow cooker.

2. Add the onion, garlic, bay leaves, peppercorns, water and apple cider vinegar.

3. Close the lid and set the slow cooker to low heat.

4. Cook for 6 to 8 hours, or until the corned beef is tender.

5. When the corned beef is done cooking, remove it from the slow cooker and let it rest on a cutting board for 10 minutes before slicing.

6. Slice the corned beef against the grain and serve. Enjoy!
