1 (3- to 4-pound) corned beef brisket with spice packet
1/2 cup beer
1/2 cup water
1 onion, cut into wedges
2 cloves garlic, minced
2 bay leaves
1 teaspoon ground black pepper
1 teaspoon mustard seed
1/2 teaspoon ground allspice
1. Rinse the corned beef brisket and discard the spice packet. Place the brisket in the slow cooker.
2. Pour in the beer and water, then add the onion wedges, garlic, bay leaves, black pepper, mustard seed, and allspice.
3. Cover and cook on low for 8 to 10 hours, or on high for 4 to 5 hours.
4. Remove the corned beef from the slow cooker, cover it with aluminum foil, and let it rest for 10 minutes before slicing.
If you don’t have beer, you can substitute 1/2 cup of beef broth or apple juice instead. If you want to add more flavor, you can also add carrots, celery, and potatoes to the slow cooker.
