– 2-3 lb. eye of round beef roast

– 2 tablespoons olive oil
– 2 cloves garlic, minced
– 1 teaspoon dried rosemary
– 1 teaspoon dried thyme


1. Preheat your oven to 425°F.

2. Place the roast in a roasting pan and season it generously with salt and pepper.
