Ingredients

1 5-7 pound corned beef brisket
1 large yellow onion
1 large carrot
2-3 stalks celery
2 tablespoons pickling spice
Water

Instructions

1. Preheat oven to 350 degrees Fahrenheit.
2. Place corned beef brisket in a large roasting pan or Dutch oven.
3. Peel and quarter the onion and place in the pan with the brisket.
4. Peel and slice the carrot into 1-2 inch chunks and add to the pan.
5. Clean and slice the celery and add to the pan.
6. Sprinkle the pickling spice over the brisket and vegetables.
7. Add enough water to the pan to cover the brisket about halfway.
8. Cover the pan with a lid or aluminum foil.
9. Place the pan in the preheated oven and bake for 3-4 hours or until the brisket is fork-tender.
10. Remove the pan from the oven and let the brisket rest for 10-15 minutes before slicing.
11. Slice the brisket across the grain before serving.

Tips

– If the brisket is not fork-tender after 3-4 hours, cover the pan and continue to cook for another hour or until tender.
– For a crispy exterior, remove the lid or aluminum foil for the last 30 minutes of cooking.
– Leftover corned beef can be stored in an airtight container in the refrigerator for up to 3 days.
