Ingredients:

• 2-3 lb. beef tenderloin
• 2 tbsp. olive oil
• 2 cloves garlic, minced
• 1/2 tsp. kosher salt
• 1/4 tsp. freshly ground black pepper
• 1 tsp. dried thyme
• 1/4 cup red wine

Instructions:

1. Preheat an outdoor grill to medium-high heat.

2. Rub the tenderloin with olive oil and garlic. Season with salt, pepper and thyme.

3. Place the tenderloin on the preheated grill and cook for 15-20 minutes, turning occasionally and brushing with red wine.

4. Insert an instant-read thermometer into the thickest portion of the tenderloin. When the temperature reaches 130 degrees F, remove the beef from the grill and let it rest for 10 minutes before slicing and serving.

Tips:

• To ensure even cooking, make sure the tenderloin is at room temperature before cooking.

• Use a meat thermometer to make sure the beef is cooked to the desired level of doneness.

• For a more flavorful tenderloin, marinate it overnight in a mixture of olive oil, garlic, and herbs.
