Ingredients
- 1 (3-4 pound) eye round roast
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1 teaspoon dried rosemary
- 1 teaspoon dried thyme
- 1 teaspoon dried oregano
- 1 teaspoon smoked paprika
- Salt and black pepper, to taste
Instructions
- Preheat oven to 350 degrees F.
- Rub roast with olive oil. In a small bowl, combine garlic, rosemary, thyme, oregano, paprika, salt and pepper. Rub the seasoning mixture over roast to evenly coat.
- Place roast in a shallow roasting pan, fat side up. Cook for 1 hour and 20 minutes, or until internal temperature reaches 145 degrees F.
- Remove from oven and let rest for 10 minutes before slicing.
Serving
