Ingredients for Rumo Roast

-4 lb. boneless beef rump roast
-2 tablespoons olive oil
-2 tablespoons minced garlic
-2 tablespoons dried oregano
-1 teaspoon ground black pepper
-1 teaspoon salt
-1 teaspoon dried rosemary
-1 teaspoon onion powder
-1 teaspoon paprika

Instructions for Preparing the Roast

1. Preheat the oven to 350 degrees F.

2. In a small bowl, combine the garlic, oregano, pepper, salt, rosemary, onion powder and paprika.

3. Rub the mixture all over the roast, making sure to cover all sides.

4. Heat the olive oil in a large skillet over medium heat.

5. Place the roast in the skillet and brown on all sides, about 5 minutes per side.

6. Place the roast in a roasting pan and cover with foil.

7. Roast the roast in the preheated oven for 2 to 2 1/2 hours, or until the internal temperature of the roast is 145 degrees F.

Instructions for Making the Sauce

1. In a small saucepan, combine 1 cup of beef broth, 1/2 cup of tomato sauce, 1/4 cup of Worcestershire sauce, 2 tablespoons of red wine vinegar and 1 tablespoon of brown sugar.

2. Bring the mixture to a simmer over low heat and let cook for 10 minutes.

3. Remove the sauce from the heat and let cool.

Instructions for Finishing the Dish

1. Remove the roast from the oven and let rest for 10 minutes before slicing.

2. Slice the roast into thin slices.

3. Serve the roast with the sauce on the side.
