Instructions

1. Preheat oven to 325°F (160°C).

2. Place the shoulder roast onto a cutting board. Rub the roast all over with olive oil and season generously with salt and pepper.

3. Place the roast onto a roasting pan and add a few cloves of garlic, some sprigs of herbs, and a few tablespoons of olive oil.

4. Roast the shoulder roast for 2 to 3 hours, or until it is cooked through and the internal temperature reads 165°F (74°C) on an instant-read thermometer.

5. Remove the roast from the oven and let it rest for 10 minutes before slicing.

Tips

1. For extra flavor, try adding some chopped onions, carrots, celery, and potatoes to the roasting pan.

2. You can also baste the roast with a mixture of olive oil, garlic, and herbs during cooking.

3. When slicing the roast, make sure to cut against the grain.
