Ingredients

• 2-3 pound chuck roast
• 1 onion, cut into wedges
• 2 cloves garlic, minced
• 2 tablespoons olive oil
• 2 tablespoons Worcestershire sauce
• 2 tablespoons balsamic vinegar
• 2 tablespoons tomato paste
• 2 tablespoons dried Italian seasoning
• 1 tablespoon smoked paprika
• 1 teaspoon red pepper flakes
• 1 teaspoon garlic powder
• 1 teaspoon black pepper
• 1 teaspoon salt
• 1 cup beef broth

Instructions

1. Heat the olive oil in a large skillet over medium-high heat.
2. Add the onion and garlic and cook for about 5 minutes, or until the onion is translucent.
3. Add the Worcestershire sauce, balsamic vinegar, tomato paste, Italian seasoning, smoked paprika, red pepper flakes, garlic powder, black pepper, and salt. Cook for another minute, stirring to combine.
4. Place the chuck roast into the crock pot and pour the onion mixture over it.
5. Pour the beef broth over the roast and onion mixture.
6. Cover the crock pot and cook on low for 8-10 hours, or until the roast is fork tender.
7. Remove the roast from the crock pot and discard the cooking liquid.
8. Slice the roast and serve.
