– 1 bone-in ribeye roast (3 to 4 lbs)
– 2 tablespoons olive oil
– 2 cloves garlic, minced
– 1 teaspoon dried oregano
– 1 teaspoon dried thyme
– Salt and freshly ground black pepper
– 2 tablespoons of butter


1. Preheat oven to 350°F.

2. Rub the olive oil, garlic, oregano, thyme, salt, and pepper into the ribeye roast.

3. Place the roast in a roasting pan and place in the preheated oven.

4. Roast for about 1 hour and 15 minutes, or until the internal temperature of the roast reaches 130°F (for rare) or 140°F (for medium rare).

5. When the roast is done, remove it from the oven and let it rest for 10 minutes before slicing.

6. When the roast has rested, melt the butter in a large skillet over medium-high heat.

7. Add the sliced ribeye to the skillet and cook for 3-4 minutes, or until the desired doneness is reached.
