How To Cook Purple Potatoes

– 2 lbs. of purple potatoes
– 2 tablespoons of olive oil
– 1 teaspoon of kosher salt
– ½ teaspoon of freshly ground black pepper
– 2 cloves of garlic, minced
– 2 tablespoons of finely chopped fresh parsley


1. Preheat the oven to 400°F.

2. Scrub the potatoes under cold running water, and then pat them dry with a clean kitchen towel. Cut the potatoes into 1-inch cubes, and place them on a baking sheet.
