Ingredients

– 2 cups all-purpose flour
– 2 eggs
– 2 teaspoons olive oil
– 1/4 teaspoon salt

Instructions

1. Place the flour in a large bowl and make a well in the center.
2. Crack the eggs into the well and add the olive oil and salt.
3. With a fork, gently beat the eggs until they are lightly scrambled.
4. Begin to incorporate the flour into the egg mixture, starting with the inner rim of the well, until the dough begins to come together.
3. Turn the dough onto a lightly floured surface and knead for 8-10 minutes, until the dough is smooth and elastic. You may need to add a little more flour if it is too sticky.
4. Wrap the dough in plastic wrap and let it rest for at least 20 minutes.
5. Cut the dough into 4 equal pieces. Working with one piece at a time, roll the dough out as thin as possible. You can use a pasta machine to make the process easier.
6. Cut the dough into desired shapes and transfer to a lightly floured surface.
7. Bring a large pot of salted water to a boil.
8. Add the pasta to the boiling water and cook for 2-3 minutes, until al dente.
9. Drain the pasta and serve with your favorite sauce. Enjoy!
