  • 1/2 cup (1 stick) unsalted butter, cold
  • 2 1/2 cups all-purpose flour
  • 1 teaspoon salt
  • 1 tablespoon sugar
  • 1/2 cup vegetable shortening, cold
  • 1/3 cup ice water
  • Filling:
    7 large apples, peeled, cored, and thinly sliced
  • 1/2 cup sugar
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1 tablespoon lemon juice
  • 2 tablespoons all-purpose flour


  1. In a large bowl, combine the flour, salt, and sugar. Cut in the butter and shortening until the mixture resembles coarse crumbs. Add the water, and mix until the dough comes together. Divide the dough into two equal portions, shape into discs, wrap in plastic, and refrigerate for at least an hour.
  2. Preheat the oven to 400°F. Grease a 9-inch pie plate.
  3. In a large bowl, combine the apples, sugar, cinnamon, nutmeg, lemon juice, and flour. Mix until all the apples are coated. Set aside.
  4. On a lightly floured surface, roll out one of the discs of dough to fit the pie plate. Place the dough in the pie plate, and trim the edges. Spoon the apple filling into the crust, and dot with butter. Roll out the second disc of dough, and place it on top of the pie. Trim the edges, and crimp to seal. Cut a few slits in the top of the pie to let steam escape.
  5. Bake for 40-45 minutes, or until the crust is golden brown and the filling is bubbling. Serve warm, with ice cream if desired.
