Ingredients:

2 tablespoons olive oil
2 cloves garlic, minced
1 large onion, sliced
1 red bell pepper, sliced
2 links Andouille sausage, sliced
1 teaspoon dried thyme
1 teaspoon smoked paprika
1/2 teaspoon cayenne pepper
1/2 teaspoon garlic powder
Salt and pepper, to taste

Instructions:

1. Preheat a large skillet over medium-high heat.
2. Add the olive oil and let it heat up.
3. Add the garlic and onion and cook until softened, about 5 minutes.
4. Add the bell pepper and cook for another 3 minutes.
5. Add the Andouille sausage, thyme, smoked paprika, cayenne pepper, garlic powder, and a pinch of salt and pepper.
6. Cook for about 5 minutes, stirring occasionally, until the sausage is cooked through and the vegetables are tender.
7. Serve with your favorite side dish and enjoy!
