Ingredients
– 1 patty pan squash
– 2 tablespoons of olive oil
– Salt and pepper to taste
– Optional: herbs such as thyme or oregano
Instructions
1. Preheat your oven to 425 degrees Fahrenheit.
2. Cut the patty pan squash in half. Scoop out the seeds from the center of the squash and discard.
3. Drizzle olive oil over the cut squash and sprinkle with salt and pepper.
4. Place the squash cut side down in a baking dish. Bake for 25-30 minutes, or until the squash is tender when pierced with a fork.
