Ingredients:

1 (4-rib) pasture-raised lamb rack
1 tablespoon olive oil
2 cloves garlic, minced
2 tablespoons fresh rosemary, finely chopped
1 teaspoon sea salt
1/2 teaspoon freshly cracked black pepper

Instructions:

1. Preheat the oven to 350°F (175°C).

2. Rub the olive oil on both sides of the lamb rack.

3. In a small bowl, mix together the garlic, rosemary, salt, and pepper.

4. Rub the garlic-rosemary mixture on both sides of the lamb rack.

5. Place the lamb rack on a baking sheet.

6. Roast in the preheated oven for 25 minutes.

7. Turn the lamb rack over and roast for an additional 25 minutes, or until desired doneness.

8. Let the lamb rest for 10 minutes before slicing and serving. Enjoy!
