Ingredients:

– One whole lamb leg
– Salt
– Pepper
– 2 tbsp olive oil
– 2 cloves garlic, minced
– 2 sprigs fresh rosemary, chopped
– 2 sprigs fresh thyme, chopped

Instructions:

1. Preheat oven to 375 degrees Fahrenheit.

2. Place the lamb leg on a cutting board and season generously with salt and pepper.

3. Heat the olive oil in a large skillet over medium-high heat.

4. Add the garlic and herbs and cook for 1-2 minutes, stirring frequently.

5. Add the lamb leg to the skillet and brown on all sides, about 10 minutes.

6. Transfer the lamb leg to a large roasting pan and place in the preheated oven.

7. Roast for 1 hour, or until a thermometer inserted in the thickest part of the lamb leg registers 135 degrees Fahrenheit (for medium-rare).

8. Remove the lamb leg from the oven and let rest for 10 minutes before slicing and serving. Enjoy!
