– 1.5kg piece of boneless lamb
– 2 tablespoons of olive oil
– 2 teaspoons of ground cumin
– 2 teaspoons of ground coriander
– 1 teaspoon of ground ginger
– 2 cloves of garlic, crushed
– 2 tablespoons of fresh mint, chopped
– 2 tablespoons of fresh parsley, chopped
– 2 tablespoons of fresh oregano, chopped
– Salt and pepper to taste


1. Preheat the oven to 200C/400F.

2. Place the lamb in a roasting tin and rub the oil over the meat.

3. In a small bowl mix together the cumin, coriander, ginger, garlic, mint, parsley and oregano.

4. Sprinkle the mixture over the lamb, covering it completely.

5. Season with salt and pepper to taste.

6. Place the roasting tin in the preheated oven and cook for 1 hour and 15 minutes.

7. Remove the roasting tin from the oven, cover with foil and allow the lamb to rest for 10 minutes before carving.

Serving Suggestions

This roasted lamb is delicious served with roasted potatoes, steamed vegetables and a fresh green salad.
