Ingredients
1 whole fish, approximately 2 lbs
3 tablespoons cooking oil
1 tablespoon butter
1 lemon
Salt and pepper to taste
Instructions
1. Preheat oven to 350 degrees F (175 degrees C).
2. Rinse the fish, inside and out, in cold water. Pat dry with a paper towel. Place the fish on a sheet of aluminum foil that is large enough to wrap the fish.
3. Rub the fish with cooking oil and season with salt and pepper to taste. Place a tablespoon of butter in the cavity of the fish and squeeze the juice from one lemon over it.
4. Wrap the fish in the aluminum foil and place on a baking sheet.
5. Bake in the preheated oven for 30 minutes. Check the fish for doneness by inserting a fork in the thickest part of the flesh. If the fish flakes easily, it is done.
6. Remove from the oven and let cool for 5 minutes before serving.
