1 large eggplant

Instructions

1. Preheat oven to 400 degrees F. Line a baking sheet with parchment paper.

2. Slice the eggplant into 1/2-inch thick rounds. Place the eggplant on the baking sheet.

3. Drizzle the olive oil over the eggplant and use your hands to coat each slice in oil.

4. Sprinkle the garlic, Italian seasoning, salt, and pepper over the eggplant.
