Ingredients

1 large eggplant
2 tablespoons olive oil
2 cloves garlic, minced
Salt and freshly ground black pepper, to taste

Instructions

1. Preheat oven to 375 degrees F (190 degrees C).

2. Cut eggplant into 1/2-inch thick slices.

3. Place eggplant slices on a baking sheet and brush each side with olive oil.

4. Sprinkle garlic, salt and pepper over the eggplant slices.

5. Bake for 18-20 minutes, flipping the slices halfway through the baking time.

6. Remove from oven and serve.
