How To Cook Chinese Eggplant

1 large Chinese eggplant, cut into wedges

2 tablespoons vegetable oil

1 tablespoon soy sauce

1 tablespoon Chinese rice wine or dry sherry

1 teaspoon freshly grated ginger

1 tablespoon sesame oil

1 tablespoon sugar

1 clove garlic, minced

2 tablespoons chopped green onions


1. Preheat oven to 375°F (190°C).

2. Place eggplant wedges on a baking sheet lined with parchment paper.

3. In a small bowl, mix together the vegetable oil, soy sauce, rice wine or sherry, ginger, sesame oil, sugar and garlic.

4. Brush the eggplant wedges with the oil and sauce mixture.

5. Bake in preheated oven for 15 minutes.

6. Turn the wedges over and bake for another 15 minutes, or until tender and golden brown.

7. Top with chopped green onions and serve.
