Ingredients:

2 lbs. stew beef
2 tablespoons vegetable oil
1 large onion, diced
3 cloves garlic, minced
2 tablespoons tomato paste
1 (14.5 oz.) can diced tomatoes
2 tablespoons Worcestershire sauce
2 cups beef broth
1 teaspoon dried thyme
1 teaspoon dried rosemary
1 bay leaf
2 large potatoes, peeled and diced
2 large carrots, peeled and diced
Salt and pepper, to taste

Instructions:

1. Heat the oil in a large soup pot over medium-high heat. Once hot, add the stew beef and brown on all sides.

2. Add the onion, garlic, tomato paste, diced tomatoes, Worcestershire sauce, beef broth, thyme, rosemary, and bay leaf. Bring to a boil, then reduce the heat to low and simmer for 1 1/2 hours.

3. Add the potatoes and carrots and simmer for an additional 30 minutes or until the beef and vegetables are cooked through.

4. Season with salt and pepper to taste. Serve hot. Enjoy!
