2-3 pounds of corned beef brisket with spice packet
4-5 potatoes, peeled and quartered
4-5 carrots, peeled and cut into 1-inch pieces
1 onion, peeled and cut into wedges
1/2 cup of beer or beef stock


1. Place the corned beef into the crock pot.

2. Add the potatoes, carrots, and onion, and pour the beer or beef stock over the ingredients.

3. Sprinkle the spice packet that came with the corned beef over the top.

4. Cover the crock pot and cook on low for 8-10 hours or on high for 4-6 hours.

5. Once the cooking time is complete, remove the lid from the crock pot and use a fork to check the tenderness of the meat.

6. If the meat is not tender, replace the lid and cook for an additional hour or two.

7. Once the meat is tender, remove it from the crock pot and set aside.

8. Add a tablespoon of butter to the remaining vegetables in the crock pot and allow to simmer for an additional 10-15 minutes.

9. Slice the corned beef and serve with the vegetables. Enjoy!
