Ingredients

2 tablespoons olive oil
1 small head cabbage, chopped
1 onion, chopped
1 teaspoon thyme
1 garlic clove, minced
1 pound corned beef, cut into cubes
1 cup beef broth
1 cup beer

Instructions

1. Heat the olive oil in a large pot over medium-high heat.
2. Add the cabbage, onion, thyme and garlic to the pot and cook, stirring occasionally, for about 5 minutes.
3. Add the corned beef and stir for another 2 minutes.
4. Pour in the beef broth and beer and bring to a boil.
5. Reduce the heat to low and simmer for 35-40 minutes, stirring occasionally.
6. Serve warm.
