How To Cook Beef Rib Roast

-3-4 pound beef rib roast
-1 teaspoon kosher salt
-1 teaspoon freshly ground black pepper
-2 tablespoons olive oil
-2 cloves garlic, minced
-1 onion, chopped
-2 tablespoons fresh thyme leaves


1. Preheat your oven to 350 degrees Fahrenheit.

2. Place the rib roast on a cutting board and season with salt and pepper. Rub the roast with the olive oil, garlic, onion and thyme.

3. Place the roast in a roasting pan or Dutch oven.

4. Roast in the preheated oven for 1 hour and 20 minutes, or until the internal temperature of the roast reaches 140 degrees Fahrenheit.
