Ingredients
1 Lamb Shank
Salt & Pepper
2 Tablespoons of Olive Oil
2 cloves of minced Garlic
1 Onion (chopped)
1 Carrot (chopped)
2 Celery Stalks (chopped)
1 cup Red Wine
2 cups Beef Stock
2 Tablespoons Tomato Paste
2 sprigs of Fresh Thyme
1 Bay Leaf
Instructions
1. Preheat oven to 325 degrees Fahrenheit.
2. Season the lamb shank with the salt and pepper.
3. Heat the olive oil in a large skillet over medium-high heat.
4. Add the lamb shank to the skillet and lightly brown on all sides, about 5 minutes.
5. Remove the lamb shank from the skillet and set aside.
6. Add the garlic, onion, carrot, and celery to the skillet and cook until the vegetables are softened, about 5 minutes.
7. Return the lamb shank to the skillet and pour in the red wine.
8. Simmer the mixture for 5 minutes, stirring occasionally.
9. Add the beef stock, tomato paste, thyme, and bay leaf and bring to a boil.
10. Cover the skillet and transfer to the preheated oven.
11. Bake for 2 hours, or until the lamb shank is tender.
12. Serve the lamb shank with the vegetables and sauce.
