How To Cook Lentil Soup

Ingredients

1 cup of dry lentils
2 tablespoons of olive oil
1 onion, chopped
2 cloves of garlic, minced
1 carrot, chopped
1 stalk of celery, chopped
4 cups of vegetable or chicken stock
1 teaspoon of ground cumin
1/2 teaspoon of ground coriander
1/4 teaspoon of smoked paprika
1/4 teaspoon of black pepper
1/4 teaspoon of red pepper flakes

Instructions

1. Begin by rinsing the lentils in a fine mesh strainer.
2. Heat the olive oil in a large soup pot over medium heat.
3. Add the chopped onion and garlic to the pot and sauté until the vegetables are softened.
4. Add the carrot and celery and sauté for a few minutes.
5. Add the stock, cumin, coriander, smoked paprika, black pepper and red pepper flakes to the pot and stir to combine.
6. Bring the mixture to a boil, then reduce the heat to low and simmer for 20 minutes.
7. Add the rinsed lentils to the pot and stir to combine.
8. Simmer for an additional 15 minutes, or until the lentils are tender.
9. Taste and adjust seasonings, if desired.
10. Serve the soup hot, with a sprinkle of freshly chopped parsley, if desired. Enjoy!
