4 potatoes, 2 tablespoons of olive oil, 1 teaspoon of garlic powder, 1 teaspoon of onion powder, 1 teaspoon of salt, 1 teaspoon of pepper, 2 tablespoons of white vinegar, 1 tablespoon of Dijon mustard, 1/4 cup of mayonnaise, 2 tablespoons of minced onion, 2 tablespoons of minced celery, 2 tablespoons of minced dill pickles, 1/4 cup of chopped hard boiled eggs, 1/4 cup of chopped parsley.


1. Preheat your oven to 400°F.
2. Peel and cut the potatoes into 1/2 inch cubes.
3. Place the potatoes in a large bowl and add the olive oil, garlic powder, onion powder, salt, and pepper. Toss to coat the potatoes.
4. Place the potatoes on a baking sheet and spread out into an even layer.
5. Bake for 20 minutes, or until the potatoes are golden brown and crispy.
6. Remove the potatoes from the oven and let cool.
7. In a small bowl, whisk together the white vinegar, Dijon mustard, and mayonnaise.
8. In a large bowl, combine the cooled potatoes, the mayonnaise mixture, minced onion, minced celery, dill pickles, hard boiled eggs, and chopped parsley.
9. Mix until everything is combined.
10. Serve immediately or chill in the refrigerator for up to 3 days. Enjoy!
