– 2 tablespoons olive oil
– 2 cups diced onion
– 2 cloves garlic, minced
– 2 tablespoons tomato paste
– 2 cups diced celery
– 2 cups diced carrots
– 2 cups vegetable broth
– 2 cups diced potatoes
– 1 cup frozen corn
– 1 cup frozen green beans
– 1 teaspoon dried oregano
– 1 teaspoon dried thyme
– 1 teaspoon dried rosemary
– Salt and pepper to taste


1. Heat the olive oil in a large pot over medium-high heat.
2. Add the onion and garlic and cook for about 5 minutes, stirring often, until the onions are softened.
3. Add the tomato paste and cook for another minute.
4. Add the celery, carrots, broth, potatoes, and frozen vegetables.
5. Stir in the oregano, thyme, and rosemary.
6. Bring the mixture to a boil, then reduce the heat and simmer for about 25 minutes, until the vegetables are tender.
7. Season with salt and pepper to taste.
